5 Things I like to Meal Prep Every Week

I am a firm believer in meal prepping. We try to have dinner ready by 5:30 pm. In order for me to do that then I need to have my ingredients prepped and ready to go so that I can just throw everything into the pan.

Also in order for me to actually eat consistently throughout the day, I need to have easy breakfasts and lunches prepared so that I’m not just living off of granola bars and coffee all day.

Meal prep doesn’t have to be hard and time-consuming. I make it very simple and practical for me and my family's needs. Here’s a post I wrote not too long ago on real-life meal planning.

Here’s what I like to meal prep every week:

  1. Overnight Oats: This is so simple and an easy recipe to customize. I prep the oats and just add fruit on the top in the mornings. My kids love this easy recipe especially when I make chocolate overnight oats.

  2. Rice/Quinoa: We typically have rice or quinoa with dinner or for lunch bowls so I just prep a big batch to use throughout the week.

  3. Pasta Salad: I love pasta and so do my kids. This is an easy meal idea and I like to load it with tons of veggies.

  4. Tuna or Chicken Salad: This is another fast and easy meal to make. We usually eat with crackers and fruit or we put the salad onto a sandwich.

  5. Oatmeal Bake: We eat a lot of oats and we love making a banana oatmeal bake for breakfast in the morning. We cut into squares and serve cold or pop it into the microwave for breakfast.

To also help me get through the week, I like to prewash any fruit and veggies I know we like to quickly grab and eat from the fridge. I also chop any veggies I’ll need for stir fry or other dinner dishes so that I won’t waste time chopping the night of.

We’re a firm believer in leftovers so doubling the meals have been a lifesaver to help carry over for lunch and dinner.
